Rosalita Roadside Cantina

 When Rosalita was a young girl she loved to spend time in the kitchen with her Papa, Juan, while he prepared the traditional Sunday family feast. He would blend freshly picked chilies, tomatoes onions with fresh herbs for his famous salsa. Mashed, ripe avocados with fresh squeezed limes from their lime tree were combined with vegetables from the garden to create his guacamole (sometimes there would even be some left for the rest of the family!). Rosie's Mama would make fresh tortillas while her father was roasting fresh pork, beef and chickens. Perfectly seasoned rice would steam as a large pot of beans would be simmering over the fire. As the smell of the black beans filled the room you would hear the sound of music begin to build as friends and family would start to arrive with bottles of tequila and ice cold cerveza. Margaritas, sangria and cerveza would be enjoyed as Juan would set the roast pork, beef and chickens out with Mama's handmade tortillas and the feast would begin and continue through the night. It was these Sunday family feasts that inspired Rosie to follow her love of food, drink & fiesta; first in Tijuana and now in Brick New Jersey.
