If you’ve never eaten Malaysian food, here’s a little background. Penang is one of the 13 states of Malaysia. Its traditional culinary style is influenced by its three major Asian groups -- Malay, Chinese and Indian. While you’ll find a few Chinese, Indian, and Malay dishes stapled on the Malaysian menu, expect also to see many dishes you’ve never heard of. You’ll recognize the flavors, but often the ingredients are highly spiced and/or spicy hot. Our favorite dishes are: Roti Canai -- a Malaysian crispy Indian-style pancake appetizer served with curry chicken as a dipping sauce. Even the best known Malay "Satay" -- appetizer cubes of beef or chicken, marinated in a deliciously-spiced sauce and skewered on bamboo sticks, roasted over glowing charcoals, and eaten dipped in a peanut sauce -- differs in flavor from state to state. The basic pattern in Malay cooking lies in the preparation of "wet" spices (lemongrass, shallots, ginger, garlic, fresh chiles and tumeric) as well as "dry" spices (coriander, cumin, aniseed, cloves, cinnamon and cardamom.) Malaysian curries are delicately flavored with various herbs and leaves such as lemongrass, galangal, fragrant lime, coriander and curry leaves. The mainstay of every meal is a generous, steaming helping of rice, accompanied by a selection of dishes including fish, vegetables, meat and sambal (shrimp paste).
