What a fabulous time for Aqua Blue Cafe to be able to open a restaurant in Montclair, NJ where a multitude of fine restaurants have already created a permanent niche. Aqua Blue Cafe welcomes the community to the rich and tasty blending of foods that is influenced by American, Soul and Latin cuisines.
When one enters Aqua Blue Cafe the atmosphere is, at once, warm and cozy. The overhead fans, soft aqua blue and amble hues throughout, the track lit tropical murals, along with a wonderful collection of caribbean calypso and Latin music, creates just the right atmosphere; making dining at Aqua Blue Cafe an exciting experience - you'll want to repeat more than once.
The aroma that lingers in the restaurant comes from the authentic cooking style whose tradition begins by first preparing a stirred fried mixture of fresh onions, peppers, garlic, cilantro leaves and other blends of herbs and spices commmonly known to us as 'sofrito'. Once this mixture is added to our receipe - it awakens a distinctive taste that is the culinary heritage of 'islands.' Common ingredients such as pumpkin, papaya, plantains, yutia potatoes, sweet bananas and jams can be found in our beans, soups, and stews.
Other tasty dishes include our fried Whiting or Catfish that is first soaked in buttermilk then breaded to produce that great Southern crisp. We also prepare our very own Southern Fried chicken served with collard greens and candied yams. You should also try our salmon or codfish cakes, grits and buttermilk biscuits.
We welcome the opportunity to share our medley of cuisines and sense of family with our neighbors.
