Chef Bio

Mike Trimarco: Mike began his Culinary career in the Wildwoods in the late 70's, coming to Atlantic City at the begining of the Casino boom. Rising to the position of an Executive Chef for the Trump Organization, Mike is well versed in many disciplines of Culinary and restaurant management. A back to basics Chef, Mike believes Freshly selected and expertly prepared foods, great service and a warm smile go a long way in making your guest feel special, whether it is in a Grand casino Hotel or in our quaint dining room.
He resides in the Southern New jersey area with his wife, and enjoys fishing and golf in his spare time.
Ed Wilkins: Ed began his career toiling along side his Mother in a small Cafe she once owned when Ed was only 6 years old. After high school, he continued his career as a Casino cook and Sous Chef in various Hotels in Atlantic City, rising to the Job of Banquet Chef for the Taj Mahal Casino, a 1,200 room Hotel.
As The man behing the plates at Hooper's, Ed likes to pare simple preparations with the accent on playing the flavors present on our taste buds, salt, sweet, sour, bitter and savory.
" We are a small operation, and we don't have a big kitchen staff, so I do a lot of prep myself. I try to save as much time as possible by looking for simple gems and flavor combinations."
Some of Chef Ed's more simple menu items include our new seafood sheperd's pie, mixed seafoods baked with vegetables and lobster cream sauce, topped with whipped potato crust. Another favorite at hoopers is our Ahi tuna tropicale, with sesame crusted tuna, seared scallops and mango pineapple salsa.

Chef Ed lives in the South Jersey area and enjoys Philadelphia sports teams, golf, fishing, DIY projects and home gardening.
